Culinary Arts and Food Systems

Food as Medicine:  Every Day Cooking with Blood Sugar Control

In this two-day, hands-on course, Chef Instructor Nima Mehregan shows how food can support steady energy, balanced blood sugar, and overall wellness — without sacrificing flavor. Participants learn core food-as-medicine principles and prepare complete dishes built around smart carbohydrates, fiber, protein, and healthy fats.


A limited optional post-course shadow experience is available for select participants interested in seeing therapeutic nutrition applied in a professional dining setting. Ideal for home cooks, caregivers, and food service professionals.

Healthcare Careers and Certifications

Licensed Nursing Assistant (LNA)

This course is designed for adults seeking to start a rewarding career in healthcare. The course prepares you for Licensed Nurse Assistant (LNA) licensure with the Vermont State Board of Nursing and provides hands-on skills for immediate employment. Whether you are beginning your first career or making a change, this program offers a strong foundation for growth in the healthcare field.

DURATION:   9 weeks (including clinicals)

Phlebotomy Technician (PTC)

Upon successful completion of this course, you will be eligible to sit for the national exam to become a Phlebotomy Technician (PTC) through the American Medical Certification Association.  You must turn 18 years of age within 6 months of the exam.

CPR - First Aid - AED

Gain the skills and confidence to respond in an emergency with American Heart Association CPR, First Aid, and AED training. This hands-on course teaches you how to care for adults, children, and infants during breathing and cardiac emergencies, as well as how to provide basic first aid and use an automated external defibrillator (AED). Participants who successfully complete the course will receive AHA certification, valid for two years.

Intro. to Wood Turning:  Crafting a Wooden Bowl

In this hands-on 10-hour course, students will explore the fundamentals of wood turning while creating a handcrafted wooden bowl from start to finish. Instruction focuses on lathe safety, understanding wood grain, proper use of turning tools, and finishing techniques. Led by experienced woodworker Mark Wilch, the course emphasizes confidence, precision, and the satisfaction of making a functional object by hand.  Limited class size - register today!

Learn the fundamentals of welding in this hands-on introductory course. Students will gain experience with basic welding techniques, equipment safety, and proper use of tools, while practicing common welds in a workshop setting. No prior experience is required—this course is designed to build confidence and provide a strong foundation for further welding training. Limited class size – register early to reserve your spot.

Welding

Advanced Welding

Build on your welding foundation with this advanced-level course designed for students who have completed Introduction to Welding. Training includes out-of-position practice in horizontal and vertical welding, pipe welding, and hands-on experience with MIG and TIG applications. Students will also have opportunities to pursue individual learning goals under the guidance of the instructor. Limited class size – register early to secure your spot. Prerequisite: Introduction to Welding.

Small Engine Repair - March/April 2026

Learn the fundamentals of small engine repair for work, hobby, or personal use. This hands-on course combines classroom instruction with shop time, giving you the opportunity to practice skills while working on your own small engine project (with instructor approval). Topics include routine maintenance, troubleshooting and diagnostics, standard repair procedures, engine function, and proper tool use. Whether you’re maintaining equipment for home or business, this course provides practical skills you can put to use right away.
